We made fresh guacamole and a from-scratch caramelised onion dip (with sour cream, mayo, and cream cheese) which turned out to be bloody nice.&lt;/p&gt;&lt;p&gt;Main course was salt-cured beef brisket, with twice baked potatoes and runner beans. Beef was cured for three weeks then slow-cooked in beer. Potatoes were baked, the top cut off and most of the flesh removed. Flesh was mashed with sour cream and spring onions, spooned back in to the shell, and the whole potato baked again to rewarm it and slightly crisp up the top of the mash. Beans were blanched, then fried in Iberian pork lard with some finely sliced prosciutto.&lt;/p&gt;&lt;p&gt;Dessert was tiramasu, inspired entirely by some marscapone I had to use up. We made a fairly proper one, with a zabaione based cream. Very happy with how it turned out.&lt;/p&gt;&lt;p&gt;Pics to follow! &lt;p&gt;In the beginning, I had Snow Leopard on my MacBook, on a small boot SSD and a bigger HDD. I backed the SSD up to the HDD (that’s on &lt;code&gt;Macintosh HD&lt;/code&gt;). That’s the oldest OS.&lt;/p&gt;

&lt;p&gt;Then I installed Lion on the SSD. Then I backed that up to the HDD prior to getting the iMac. That’s next newest. Physically, these are on a laptop drive in a USB enclosure. That’s &lt;code&gt;Lion boot&lt;/code&gt;.&lt;/p&gt;

&lt;p&gt;The iMac came with a new Lion install on its internal 1 TB hard drive, on which I ran Migration Assistant, transferring most things from the old two drives. Transferring so well that the iMac ended up being unable to boot without that enclosure attached (I assume some system daemon or other background process was somehow loading from the external drive). That’s the &lt;code&gt;iMac HDD&lt;/code&gt; partition. That’s the second install of Lion.&lt;/p&gt;

&lt;p&gt;Then I moved almost all of the data off that drive to &lt;code&gt;iMac Data&lt;/code&gt;, which will be my main data repository when all this is over.&lt;/p&gt;

&lt;p&gt;Then I &lt;a href="https://twitter.com/#!/PenLlawen/status/176295209729142784"&gt;installed a new SSD in the iMac&lt;/a&gt; and installed a clean version of Lion onto it (see above dubioustiy re: my last install of Lion not booting unless the external drive was attached. I didn’t want to just carry this install forward. It started life as Leopard so I figure it’s time to clean house.) That’s the third Lion bootable volume.&lt;/p&gt;

&lt;p&gt;I now have to &lt;a href="http://mattgemmell.com/2011/06/21/using-os-x-with-an-ssd-plus-hdd-setup/"&gt;re-integrate the stuff on iMac Data onto Lion SSD via symlinks&lt;/a&gt; and reinstall apps and whatnot on the Lion SSD drive. Then all I have to do is confirm there’s nothing left on &lt;code&gt;iMac HDD&lt;/code&gt;, &lt;code&gt;Lion Boot&lt;/code&gt;, or &lt;code&gt;Macintosh HD&lt;/code&gt; I want, then wipe those drives. Simple. Did I mention that although there’s significant overlaps between each drive, no single one of them has the canonical set of my files? Simple.&lt;/p&gt;

&lt;p&gt;In the mean time, my Mac’s boot menu has five options in it — three different Lion installs, one Snow Leopard, and the Lion Recovery Partition (which only shows up once even though I think it’s on &lt;em&gt;all three drives&lt;/em&gt;).&lt;/p&gt;
